Breaded Chicken

Chicken legs and/or thighs with skin
1 Large egg
1 cup seasoned breadcrumbs (if you use plain breadcrumbs add seasoning of your choice)
Olive oil
Salt and Pepper

Preheat oven to 400*F with rack in the center. Heat a skillet over medium heat. Pour oil and heat until hot. While the oil is heating, beat the egg with salt and pepper. Place the breadcrumbs in a separate dish. Dip each piece of chicken in the egg mixture, then coat in the breadcrumbs. Once coated place the chicken in the hot oil and cook for a few minutes on each side until it’s golden brown. Place the chicken in a baking dish in a single layer and cook covered with foil for 10 minutes. After 10 minutes reduce heat to 350*F and remove the cover. Bake until chicken is cooked and juices run clear 30 – 45 minutes.
