Challah Bread

1 package quick rise yeast
4 cups flour
1/4 cup sugar
1 tsp salt
2 eggs (save 1 tbsp for glaze)
3/4 cup water
1/4 cup oil

Mix yeast, water and sugar in a bowl and let it bubble. Add the rest of ingredients mix and knead until smooth. Place into oiled bowl, cover and let rise until doubled in size.
After rising punch the dough down and knead a bit. Divide in two and divide each half into 3 or more sections to braid. Braid it and place on baking sheet, cover and let rise until doubled.
Mix saved egg with 1 tbsp water and brush the top. Add seeds if desired. Bake at 350* F for 20 – 25 minutes until brown.
