Chicken with Caramelized Onions
Slice 2 medium size onions. Place it in a bowl and season with salt, pepper, onion powder, garlic powder, paprika and a pinch of cumin. Add in 1 tbsp of olive oil and mix. Put 3/4 of the onion mix on the bottom of your pan. Place chicken on top. Season chicken with salt, pepper and paprika. Place remaining onions on top of the chicken. Cover and bake at 350*F for an hour. Uncover, raise the heat to 425*F and bake additional 25 minutes or until it turns golden brown.
