GF Pistachio Cranberry Cookies

2 cups Almond flour
1/4 cup packed dark brown sugar
1/2 tsp baking soda
2 tsp pumpkin pie spice
1/8 tsp salt
1/3 cup unsweetened applesauce
1 egg, beaten
1/2 cup shelled pistachios, coarsely chopped
1/3 cup dried cranberries

Preheat oven to 350*F and line a baking sheet with parchment. In a bowl, stir together almond flour, brown sugar, baking soda, pumpkin pie spice and salt. Stir in the applesauce and egg. Fold in pistachios and cranberries. Using wet hands scoop and roll dough into 2 inch balls. Place on baking sheet and press down to flatten and smooth tops. Bake 12-15 minutes until bottoms are golden brown.
Pistachios can be swapped with pumpkin seeds or old fashioned oats.
