Hummus

1 – 15 oz can chickpeas, rinsed and drained (save the water)
1/4 cup tahini
1/4 cup lemon juice
2 garlic cloves, minced
1/2 tsp ground cumin
3/4 tsp salt
2 tbsp EVOO

In a food processor, combine tahini and lemon juice for about 1 minute. Add EVOO, garlic, cumin and salt and pulse for 30 seconds. Add the chickpeas and process until well combined. Scape down the sides and process again. If it’s too dry add a little reserved water from the canned chickpeas. To serve drizzle with olive oil and sprinkle with paprika.
