1 lb ground lamb or beef
Small bunch of parsley, finely chopped
3 garlic cloves, chopped
1 onion, finely chopped
Juice of 1/2 lemon
1 tsp cumin
1 tsp paprika
Pinch of turmeric
1 tbsp tomato paste
Cayenne pepper or chopped fresh chilies (optional)
1 egg, beaten
Salt and Pepper
Put the meat, bread crumbs, parsley, garlic, onion, lemon juice, spices, tomato paste, egg, cayenne pepper (if using) and salt and pepper in a bowl. Mix well.
With wet hands, shape the mixture into large or small patties.
Heat a non stick frying pan, add the patties and cook, make sure they do not fall apart, turning once until browned.
