Potato Stuffing

2 lbs small white potatoes
8 ounces mixed sliced mushrooms
4 tbsp unsalted butter
2 medium onions, chopped
3 celery stalks, chopped
1/2 cup pine nuts, lightly toasted
Salt and Pepper
7 ounces cream crackers, broken into bite size pieces (optional)

Boil potatoes, drain. Cook mushrooms in 2 tbsp of butter in a skillet over high heat, until golden brown. Cook onions and celery in remaining 2 tbsp butter, until soft. Peel potatoes, mash but leave whole (I sliced and fried my potatoes). Add pine nuts, mushrooms, onion mixture, salt and pepper. Stir in crackers if using. Put in baking dish and cover with foil and bake at 350*F for 15 minutes. Remove foil and bake until heated through and golden.
