Sour Cream Crumb Bars

For Crust and Topping:
1/2 cup unsalted butter, melted and cooled to room temperature
1 1/2 cup all purpose flour
1/2 cup light brown sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
For Filling:
1 cup sour cream
3/4 cup sugar
2 tbsp all purpose flour
1 egg
1 tsp vanilla extract
Grease an 8” square pan. Preheat oven to 375*.
In a bowl mix together flour, brown sugar, soda, baking powder and salt. Add melted butter and mix until dough forms. Reserve about 3/4 cup mixture for topping. Press the remaining dough into prepared pan. Set aside.
Place all filling ingredients in a mixing bowl as mix until combined. Pour over crust. Sprinkle with the reserved topping mixture. Bake for 25-30 minutes or until the top is golden brown. Cool completely and cut into squares.
